Can my boss cut my pay without my agreement?

No. Your rate of pay is a term of your contract and can't be reduced unilaterally. An employer can propose a cut, but it only takes effect if you agree, and pay can never fall below the applicable award or enterprise agreement minimum.

Is 'at-will employment' legal in Australia?

No. 'At-will employment' is a United States concept with no legal effect in Australia. No contract clause can remove your right to minimum notice, the National Employment Standards, or unfair dismissal protection once you're eligible.

Can my boss make me find someone to cover my shift?

No. Arranging cover for rostered shifts is the employer's responsibility, not yours. You must give notice of an absence and provide evidence for paid sick leave, but you can't be lawfully disciplined just for not finding your own replacement.
